Pork Chop

Method

Brining

    Prepare the Brine

    In a large bowl, mix together water, salt, sugar, and spices until the salt and sugar are completely dissolved.

    Brine the Pork Chops

    Submerge the double bone pork chops in the brine and refrigerate for at least 4 hours, preferably overnight.

Grilling

    Preheat the Grill

    Preheat your grill to medium-high heat.

    Grill the Pork Chops

    Remove the pork chops from the brine and pat dry. Grill the chops for about 6-8 minutes on each side, or until they reach an internal temperature of 145°F (63°C).

Herb Butter

    Make the Herb Butter

    In a bowl, combine the softened butter, parsley, rosemary, thyme, minced garlic, and black pepper. Mix well until all ingredients are incorporated.

    Finish the Pork Chops

    Once the pork chops are grilled, remove them from the grill and place a dollop of herb butter on top of each chop, allowing it to melt.

BBQ Sauce

    Prepare the BBQ Sauce

    In a saucepan, combine ketchup, apple cider vinegar, brown sugar, Worcestershire sauce, smoked paprika, garlic powder, onion powder, salt, and black pepper. Stir to combine.

    Simmer

    Bring the mixture to a simmer over medium heat and cook for 15-20 minutes, stirring occasionally until thickened.

Serving

    Serve the grilled pork chops with a generous side of homemade BBQ sauce and enjoy!
