Oysters Preparation

Shucking the Oysters
Using a clean oyster knife, carefully shuck each oyster by inserting the knife into the hinge of the oyster. Twist the knife to open the shell. Remove the oyster from the shell and place it on a serving platter.
Tequila Mignonette Preparation

Mixing the Mignonette
In a small bowl, combine the red wine vinegar, tequila, finely minced shallot, and freshly cracked black pepper. Stir well and let it sit for at least 15 minutes to allow the flavors to meld.
Horseradish Cocktail Sauce Preparation

Making the Cocktail Sauce
In another bowl, mix together the ketchup, prepared horseradish, lemon juice, Worcestershire sauce, and hot sauce. Adjust the hot sauce to your taste preference and mix until well combined.

Arrange the shucked oysters on the half shell on a platter. Serve with the tequila mignonette and horseradish cocktail sauce on the side for dipping.
