Bison Patty Preparation

Mix the Bison
In a large mixing bowl, combine the ground bison, garlic powder, onion powder, salt, and black pepper. Mix gently until just combined.

Form Patties
Divide the mixture into two equal portions and form each portion into a patty, about ¾ inch thick. Make a slight indentation in the center of each patty to help it cook evenly.

Fry the Jalapeños
In a small bowl, prepare the tempura batter according to the package instructions. Heat oil in a deep pan over medium-high heat. Dip the whole jalapeños into the batter and carefully place them in the hot oil. Fry until golden brown, about 3-4 minutes. Remove and drain on paper towels.

Assemble the Burger
Toast the brioche buns lightly on the grill. On the bottom half of each bun, spread BC sauce to taste. Place the grilled bison patty with melted cheddar on top, followed by a grilled pineapple slice and tempura fried jalapeños. Top with the other half of the brioche bun.
