Herb Butter Preparation

Make the Herb Butter
In a small bowl, mix together the softened unsalted butter, chopped parsley, thyme, and minced garlic. Once well combined, transfer to a piece of parchment paper, roll into a log, and refrigerate until firm.

Add Remaining Ingredients
Stir in the brown sugar, bourbon, and apple cider vinegar. Let the mixture simmer for about 10 minutes until thickened. Add the cooked bacon back into the mixture and stir to combine.
Steak Fries Preparation

Prepare the Potatoes
Preheat the oven to 425°F (220°C). Cut the russet potatoes into wedge shapes, leaving the skins on.

Season and Bake
In a large bowl, toss the potato wedges with olive oil, salt, black pepper, and paprika. Spread them out in a single layer on a baking sheet and bake for 30-35 minutes, flipping halfway through, until golden brown and crispy.

On a serving plate, place the grilled ribeye steak and top it with a generous slice of herb butter. Serve alongside a small bowl of bourbon bacon jam and the steak fries.
