Method

Crust Preparation

  1. 1

    Preheat the Oven

Preheat your oven to 350°F (175°C).

  2. 2

    Prepare the Crust

In a medium bowl, combine the graham cracker crumbs, granulated sugar, and melted butter. Mix until well combined.

  3. 3

    Form the Crust

Press the mixture into the bottom of a 9-inch springform pan evenly. Use the bottom of a measuring cup to pack it down tightly.

  4. 4

    Bake the Crust

Bake the crust in the preheated oven for 10 minutes. Remove and let it cool while you prepare the filling.

Cheesecake Filling Preparation

  1. 5

    Beat the Cream Cheese

In a large mixing bowl, beat the softened cream cheese until smooth using an electric mixer.

  2. 6

    Add Sugar and Sour Cream

Gradually add the granulated sugar and sour cream to the cream cheese, mixing until combined and smooth.

  3. 7

    Incorporate Vanilla and Lemon Juice

Add in the vanilla extract and lemon juice, mixing until fully integrated.

  4. 8

    Add Eggs

Add the eggs one at a time, mixing on low speed after each addition until just combined. Do not overmix.

  5. 9

    Pour Filling into Crust

Pour the cheesecake filling over the cooled crust in the springform pan.

  6. 10

    Bake the Cheesecake

Bake in the preheated oven for 50-60 minutes or until the center is set but still slightly jiggly.

  7. 11

    Cool the Cheesecake

Turn off the oven and crack the door open. Let the cheesecake cool in the oven for 1 hour, then refrigerate for at least 4 hours or overnight.

Topping Preparation

  1. 12

    Prepare the Topping

Before serving, wash and dry the fresh berries. If desired, sprinkle with powdered sugar for added sweetness.

  2. 13

    Serve

Slice the cheesecake, top with berries, and serve chilled.
