Crème Brûlée

Method

Crème Brûlée

  1. 1

    Prepare the Cream Mixture

In a saucepan, heat the heavy cream over medium heat until it begins to simmer. Split the vanilla bean lengthwise, scrape the seeds into the cream, and add the bean pod. Remove from heat and let steep for 15 minutes.

  2. 2

    Mix Egg Yolks and Sugar

In a mixing bowl, whisk together the egg yolks, granulated sugar, and a pinch of salt until the mixture is pale and slightly thickened.

  3. 3

    Combine Mixtures

Remove the vanilla bean pod from the cream, and gradually pour the warm cream into the egg yolk mixture, whisking constantly to temper the eggs.

  4. 4

    Prepare for Baking

Strain the mixture through a fine mesh sieve to remove any bits. Pour the mixture into ramekins and place them in a baking dish. Fill the baking dish with hot water halfway up the sides of the ramekins.

  5. 5

    Bake

Bake in a preheated oven at 325°F (160°C) for 30-35 minutes, or until the edges are set but the center is still slightly jiggly.

  6. 6

    Cool and Chill

Remove from the oven and allow to cool to room temperature. Then refrigerate for at least 2 hours or until fully set.

  7. 7

    Caramelize the Sugar

Sprinkle a thin layer of granulated sugar over the top of each crème brûlée. Using a kitchen torch, caramelize the sugar until it bubbles and turns golden brown.

Sugar Cookies

  1. 8

    Cream Butter and Sugar

In a large mixing bowl, cream together the unsalted butter and granulated sugar until light and fluffy.

  2. 9

    Add Egg and Vanilla

Beat in the egg and vanilla extract until well combined.

  3. 10

    Combine Dry Ingredients

In a separate bowl, whisk together the flour, baking powder, and salt.

  4. 11

    Mix Dry and Wet Ingredients

Gradually add the dry ingredients to the wet mixture, mixing until just combined.

  5. 12

    Chill the Dough

Cover the dough with plastic wrap and refrigerate for at least 30 minutes.

  6. 13

Preheat Oven and Prepare Baking Sheet

Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.

  7. 14

    Shape and Bake Cookies

Roll the chilled dough into balls and place them on the prepared baking sheet. Flatten slightly and bake for 10-12 minutes or until the edges are lightly golden.

  8. 15

    Cool Cookies

Remove the cookies from the oven and allow them to cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.
