Prepare the Potatoes

Wash the red bliss potatoes under cold running water to remove any dirt or debris. Cut them into quarters or halves, depending on their size, to ensure even cooking.

Boil the Potatoes

Place the cut potatoes in a large pot and cover them with water. Add 1 tsp of salt to the water. Bring the water to a boil over high heat, then reduce the heat to medium. Allow the potatoes to simmer for about 15-20 minutes, or until they are fork-tender.

Drain the Potatoes

Once the potatoes are cooked, drain them in a colander and let them sit for a minute to get rid of excess steam.

Mashing

Mash the Potatoes

Return the drained potatoes to the pot over low heat. Add 4 tbsp of butter and 1 cup of milk. Using a potato masher, mash the potatoes until they reach your desired consistency, whether smooth or slightly chunky.

Season the Mash

Add 1 tsp of black pepper and additional salt to taste. Mix well to combine all the flavors.

Garnishing

Prepare the Scallions

Wash the scallions and trim the root ends. Slice them thinly, including some of the green tops for added color.

Serve

Spoon the mashed potatoes into a serving dish and sprinkle the sliced scallions on top as a garnish. Serve warm.
