Method
Budino Base
- 1
Prepare the Mixture
In a medium saucepan, combine the whole milk, heavy cream, granulated sugar, cornstarch, and salt. Whisk together until thoroughly combined.
- 2
Heat the Mixture
Place the saucepan over medium heat and cook the mixture, stirring constantly, until it starts to steam and thicken, about 5-7 minutes.
- 3
Add Peanut Butter and Egg Yolks
Once thickened, remove it from heat. Stir in the creamy peanut butter and vanilla extract until smooth. In a separate bowl, whisk the egg yolks. Gradually add a small amount of the hot mixture to the egg yolks to temper them, then slowly whisk the egg yolk mixture back into the saucepan.
- 4
Finish Cooking
Return the saucepan to low heat and cook for an additional 2-3 minutes, stirring continuously until fully thickened.
- 5
Chill the Budino
Pour the mixture into individual serving cups or a large bowl. Cover with plastic wrap, ensuring it touches the surface to prevent a skin from forming. Refrigerate for at least 4 hours or until set.
Chocolate Ganache
- 6
Heat the Cream
In a small saucepan, heat the heavy cream over medium heat until it just begins to simmer. Do not boil.
- 7
Make the Ganache
Remove from heat and add the semi-sweet chocolate chips to the cream. Let it sit for 2-3 minutes, then stir until smooth and glossy.
Garnish
- 8
Prepare the Garnish
While the budino is chilling and the ganache is cooling, chop the Reese's peanut butter cups into small pieces.
- 9
Assemble the Dessert
Once the budino has set, pour the chocolate ganache over the top and sprinkle with chopped Reese's peanut butter cups and crushed peanuts. Serve chilled.
