Shuck the corn and cut the kernels off the cobs to measure 4 cups. Set aside.

Gather all the ingredients: Cotija cheese, heavy cream, butter, lime juice, paprika, cayenne pepper, salt, black pepper, cilantro, and lime wedges.

Sauté the Corn
In a large skillet, melt the butter over medium heat. Add the corn kernels and sauté for about 5-7 minutes until they are tender and slightly caramelized.

Add Cream and Cheese
Pour in the heavy cream, and stir in the Cotija cheese. Cook for an additional 5 minutes, stirring occasionally until the mixture is creamy and heated through.

Add paprika, cayenne pepper, salt, and black pepper. Stir well to combine and cook for another 2 minutes.

Remove the skillet from heat and stir in the lime juice. Adjust seasoning with more salt or pepper if needed.
