    Cook the Pasta

    In a large pot, bring salted water to a boil. Add the pasta and cook until al dente according to package instructions. Drain and set aside.

    Prepare the Lobster

    If using live lobster, cook the lobster in boiling water for 8-10 minutes. Remove, cool, and chop the meat into bite-sized pieces.

Making the Cheese Sauce

    Make a Roux

    In a large saucepan, melt the butter over medium heat. Sprinkle in the flour and whisk constantly for about 2-3 minutes until golden and bubbly.

    Add Milk

    Gradually whisk in the milk, ensuring there are no lumps. Continue to whisk until the mixture thickens and begins to bubble.

    Season the Sauce

    Stir in the garlic powder, onion powder, salt, black pepper, and paprika. Mix well.

    Incorporate the Cheeses

    Reduce heat to low and add the Fontina, cheddar, and mascarpone cheeses to the sauce. Stir until melted and smooth.

Combining Ingredients

    Mix Pasta and Sauce

    In a large mixing bowl, combine the cooked pasta and cheese sauce. Gently fold in the chopped lobster until evenly distributed.

    Transfer to Baking Dish

    Preheat the oven to 350°F (175°C). Transfer the lobster mac and cheese mixture into a greased baking dish. Spread evenly.

    Top with Breadcrumbs

    Sprinkle breadcrumbs evenly over the top of the mac and cheese.

    Bake in the preheated oven for 25-30 minutes until the top is golden brown and the cheese is bubbling.
