Ice Cream Base

Method

Ice Cream Preparation

  1. 1

    Mix the Base

In a large mixing bowl, combine heavy cream, whole milk, granulated sugar, vanilla extract, and a pinch of salt. Whisk together until the sugar is completely dissolved.

  2. 2

    Chill the Mixture

Cover the bowl with plastic wrap and refrigerate for at least 2 hours or overnight. This will enhance the flavors.

  3. 3

    Churn the Ice Cream

Pour the chilled mixture into an ice cream maker and churn according to the manufacturer's instructions until it reaches a soft-serve consistency.

  4. 4

    Freeze

Transfer the churned ice cream to an airtight container and freeze for at least 4 hours or until firm.

Sorbet Preparation

  1. 5

    Make the Syrup

In a small saucepan, combine granulated sugar and water. Heat over medium heat, stirring until the sugar completely dissolves. Remove from heat and let it cool.

  2. 6

    Combine Ingredients

In a blender, combine the fruit puree, cooled syrup, lemon juice, and a pinch of salt. Blend until smooth.

  3. 7

    Chill the Mixture

Refrigerate the mixture for at least 1 hour to allow the flavors to meld.

  4. 8

    Churn the Sorbet

Pour the chilled mixture into an ice cream maker and churn according to the manufacturer's instructions until it is light and fluffy.

  5. 9

    Freeze

Transfer the churned sorbet to an airtight container and freeze for at least 3 hours or until firm.
