    Prepare the Brussels Sprouts

    Trim the ends of the Brussels sprouts and remove any yellow or damaged leaves. Cut each sprout in half lengthwise.

    Slice the Onion

    Peel and slice the yellow onion into thin strips.

    Cut the Bacon

    Slice the bacon into small lardons or strips.

    Cook the Bacon

    In a large skillet over medium heat, add the bacon lardons and cook until crispy, about 5-7 minutes. Remove the bacon from the skillet and set aside, leaving the rendered fat in the pan.

    Caramelize the Onions

    In the same skillet, add the sliced onion to the rendered bacon fat. Cook over medium-low heat until the onions are soft and caramelized, about 10-15 minutes, stirring occasionally.

    Add Brussels Sprouts

    Once the onions are caramelized, add the halved Brussels sprouts to the skillet. Stir to combine and cook for about 5 minutes.

    Add Seasoning and Maple Syrup

    Add the salt, black pepper, maple syrup, and fresh thyme to the Brussels sprouts. Stir well to combine and ensure the sprouts are evenly coated.

    Finish Cooking

    Cover the skillet and cook for an additional 8-10 minutes, until the Brussels sprouts are tender and caramelized, stirring occasionally. Finally, stir in the crispy bacon pieces before serving.
