    Season the Steak

    Generously season the bone-in cowboy ribeye steak on both sides with kosher salt, black pepper, garlic powder, onion powder, smoked paprika, and dried thyme. Make sure to rub the seasoning into the meat for better flavor. Let the steak sit at room temperature for about 30-45 minutes.

    Preheat the Grill or Oven

    Preheat your grill to high heat (around 450°F to 500°F) or preheat your oven to 425°F.

    Sear the Steak

    Add olive oil to a cast-iron skillet over medium-high heat. Once the oil is shimmering, carefully place the ribeye steak in the pan. Sear for about 4-5 minutes on one side until a nice crust forms.

    Flip the steak over and add the unsalted butter and rosemary sprigs to the pan. Continue to cook for another 4-5 minutes, basting the steak with the melted butter using a spoon.

    Use a meat thermometer to check the internal temperature of the steak. For medium-rare, aim for 130°F to 135°F. Adjust cooking time as necessary based on desired doneness.
