Mashing

Mash the Grains
Heat 3 gallons of filtered water to 165°F (74°C) and mash the Pilsner and Carapils malts for 60 minutes. Maintain the temperature at around 150°F (65°C).

Sparging
After mashing, sparge the grains with an additional 2 gallons of hot water to collect the wort.
Boiling

Boil the Wort
Bring the wort to a boil and add the Saaz hops. Boil for 60 minutes, adding the Hallertau hops in the last 15 minutes of the boil.
Fermentation

Cool and Ferment
Cool the wort quickly to around 68°F (20°C) and transfer to a fermentation vessel. Pitch the Pilsner yeast and ferment for 2 weeks at 50°F (10°C).
Kegging

Keg the Beer
After fermentation is complete, transfer the beer to a keg, carbonate, and let it condition for another week.
