    Prepare the Marinade

    In a large bowl, combine all marinade ingredients: olive oil, apple cider vinegar, honey, garlic powder, onion powder, smoked paprika, salt, black pepper, and cayenne pepper. Whisk until well blended.

    Marinate the Meat

    Place the pork ribs and beef brisket in a large resealable plastic bag. Pour the marinade over the meat, seal the bag, and massage the marinade into the meat. Refrigerate for at least 4 hours, preferably overnight.

    Prepare the Grill

    Preheat your grill to medium-high heat. If using a charcoal grill, prepare the coals until they are covered with white ash.

    Grill the Meat

    Remove the meat from the marinade and discard the marinade. Place the pork ribs and beef brisket on the grill. Cook the ribs for about 4-5 hours, turning occasionally, until the meat is tender and pulls away from the bone. Cook the brisket for about 3-4 hours, or until it reaches an internal temperature of 90°C (195°F).

    Make the BBQ Sauce

    While the meat is grilling, in a saucepan over medium heat, combine ketchup, brown sugar, Worcestershire sauce, mustard, soy sauce, and liquid smoke. Stir to combine and bring to a simmer. Cook for about 15 minutes or until thickened.

    Apply BBQ Sauce

    During the last 30 minutes of cooking, brush the BBQ sauce generously over the meat on the grill, turning frequently to caramelize the sauce.

Serving

    Slice and Serve

    Once cooked, remove the meat from the grill and let it rest for 10 minutes. Slice the brisket against the grain, serve the ribs as is, and enjoy your BBQ feast!
