Method

Prepare the Filling

  1. 1

    Mix the Filling Ingredients

In a large bowl, combine the shredded prime rib, refried beans, shredded cheddar cheese, chopped onion, chopped cilantro, cumin, salt, and black pepper. Mix until well incorporated.

Assemble the Chimichangas

  1. 2

    Fill the Tortillas

Lay out a flour tortilla on a clean surface. Spoon about 1/2 cup of the filling mixture onto the center of the tortilla.

  2. 3

    Fold the Tortillas

Fold the sides of the tortilla over the filling, then roll it up tightly from the bottom to the top, ensuring the filling is secured inside.

  3. 4

    Repeat

Repeat this process for the remaining tortillas and filling.

Fry the Chimichangas

  1. 5

    Heat the Oil

In a large heavy-bottomed pot or deep skillet, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C).

  2. 6

    Fry the Chimichangas

Carefully place the chimichangas in the hot oil, a few at a time. Fry until they are golden brown and crispy, about 3-4 minutes on each side.

  3. 7

    Drain

Remove the chimichangas from the oil and place them on a paper towel-lined plate to drain excess oil.

Serve

  1. 8

    Plate the Chimichangas

Serve the chimichangas hot, topped with sour cream and salsa on the side.
