Preparing Tortilla Chips

    Cut and Fry Tortillas

    Cut the corn tortillas into triangular shapes. Heat the vegetable oil in a deep frying pan over medium heat. Once the oil is hot, carefully place the tortilla triangles into the oil in batches. Fry until golden brown and crispy, about 2-3 minutes. Remove and drain on paper towels. Sprinkle with salt.

Making Cheese Sauce

    In a saucepan over medium heat, melt the butter. Once melted, add the flour and whisk to form a roux, cooking for about 1 minute.

    Slowly pour in the milk while whisking continuously to prevent lumps. Continue to cook until the mixture thickens, about 3-5 minutes. Then, gradually stir in the cheddar and Monterey Jack cheese until melted and smooth. Add salt, black pepper, and chili powder, mixing well.

Assembling Nachos
