Fries

Method

Preparing the Fries

  1. 1

    Cut the Potatoes

Wash and peel the potatoes. Slice them into thin strips (about 1/4 inch thick).

  2. 2

    Soak the Potatoes

Soak the potato strips in cold water for at least 30 minutes to remove excess starch.

  3. 3

    Dry the Potatoes

Drain the potatoes and pat them dry with paper towels.

  4. 4

    Heat the Oil

In a large pot or deep fryer, heat the vegetable oil to 350°F (175°C).

  5. 5

    Fry the Potatoes

Carefully add the potato strips to the hot oil in batches. Fry until golden brown, about 4-5 minutes. Remove and drain on paper towels. Sprinkle with salt.

Making the Cheese Sauce

  1. 6

    Melt the Butter

In a saucepan over medium heat, melt the butter.

  2. 7

    Add Flour

Whisk in the flour and cook for 1-2 minutes until golden, making a roux.

  3. 8

    Add Milk

Gradually whisk in the milk, stirring constantly until the mixture is smooth and thickens, about 3-5 minutes.

  4. 9

    Add Cheese

Remove from heat and stir in the shredded cheddar cheese until melted. Add pepper and garlic powder. Stir well.

Assembling the Cheese Fries

  1. 10

    Layer the Fries

Place a layer of crispy fries on a serving platter.

  2. 11

    Add Cheese Sauce

Pour the cheese sauce generously over the fries.

  3. 12

    Garnish

Top with chopped green onions, sliced jalapeños, and a dollop of sour cream if desired.
