Season the Pork
In a small bowl, mix together smoked paprika, brown sugar, salt, black pepper, garlic powder, and onion powder. Rub this seasoning mixture all over the pork shoulder.

Cook the Pork
Place the seasoned pork shoulder in a slow cooker. Pour in the apple cider vinegar and water. Cover and cook on low for 8-10 hours, or until the pork is tender and easily shredded.

Shred the Pork
Once cooked, remove the pork from the slow cooker and shred it using two forks. Return the shredded pork to the slow cooker and mix it with the BBQ sauce. Let it warm through for about 30 minutes.

Mix the Slaw Ingredients
In a large bowl, combine the shredded cabbage and carrots.

In a separate small bowl, whisk together the mayonnaise, apple cider vinegar, sugar, salt, and black pepper.

Combine Slaw and Dressing
Pour the dressing over the cabbage and carrots. Toss well to combine. Refrigerate for at least 30 minutes to allow flavors to meld.

Toast the buns lightly if desired. Place a generous portion of the BBQ pork on the bottom half of each bun. Top with a scoop of slaw and add pickles. Place the top half of the bun on top.
