Prepare the Pie Crust

Make the Dough
In a large bowl, whisk together 2.5 cups of all-purpose flour, 2 tablespoons of granulated sugar, and 0.5 teaspoon of salt. Cut in 1 cup of unsalted butter until the mixture resembles coarse crumbs. Stir in 6 tablespoons of ice water, one tablespoon at a time, until the dough comes together. Shape the dough into a disk, wrap in plastic wrap, and refrigerate for at least 1 hour.

In a large mixing bowl, combine 6 cups of sliced apples, 0.75 cup of granulated sugar, 0.25 cup of brown sugar, 1 teaspoon of ground cinnamon, 0.5 teaspoon of ground nutmeg, 2 tablespoons of all-purpose flour, 1 tablespoon of lemon juice, and 1 teaspoon of vanilla extract. Toss until the apples are well coated.

Assemble the Pie
Pour the apple filling into the prepared pie crust. Cover with the second rolled-out crust, sealing the edges by crimping with a fork. Cut slits in the top crust to allow steam to escape.

Bake the Pie
Preheat the oven to 425°F (220°C). Bake the pie for 15 minutes, then reduce the temperature to 350°F (175°C) and bake for an additional 35-45 minutes, or until the apples are tender and the crust is golden brown. Let the pie cool before serving.

Slice the cooled apple pie and serve warm with a scoop of vanilla ice cream on the side.
