Cook the Pasta
Bring a large pot of salted water to a boil. Add the spaghetti and cook according to package instructions until al dente, usually about 8-10 minutes.

Prepare the Pancetta
While the pasta is cooking, heat a large skillet over medium heat. Add the pancetta and cook until crispy and golden brown, about 4-5 minutes. Turn off the heat and set aside, keeping the pancetta and rendered fat in the skillet.

Mix Eggs and Cheese
In a mixing bowl, whisk together the eggs and grated Parmesan cheese until well combined. Add a generous amount of black pepper to the mixture.

Combine Ingredients
Once the pasta is al dente, reserve about 1 cup of pasta water, then drain the spaghetti. Quickly add the hot spaghetti to the skillet with pancetta and its fat. Toss well to coat the pasta.

Season and Serve
Taste and adjust seasoning with salt and additional pepper if needed. Serve immediately, garnished with extra Parmesan cheese and freshly cracked black pepper.
