Dough Preparation

Activate the Yeast
In a small bowl, combine warm water, sugar, and yeast. Let it sit for about 5-10 minutes until frothy.

Mix the Dough
In a large mixing bowl, combine flour and salt. Make a well in the center and pour in the activated yeast mixture and olive oil. Mix until a dough forms.

Knead the Dough
Transfer the dough to a floured surface and knead for about 8-10 minutes until smooth and elastic.

Let the Dough Rise
Place the dough in a lightly oiled bowl, cover with a damp cloth, and let it rise in a warm place for about 1 hour, or until doubled in size.

Preheat the Oven
Preheat your oven to 475°F (245°C). If using a pizza stone, place it in the oven to heat.

Shape the Dough
Once the dough has risen, punch it down and turn it out onto a floured surface. Roll or stretch it into a 12-inch round pizza base.

Add Tomato Sauce
Spread tomato sauce evenly over the pizza base, leaving a small border around the edges.

Add Cheese
Tear the fresh mozzarella into pieces and distribute it evenly over the sauce.

Season
Drizzle olive oil over the pizza and season with salt and black pepper to taste.

Bake the Pizza
Transfer the pizza to the preheated oven (or onto the pizza stone) and bake for 10-12 minutes, or until the crust is golden and the cheese is bubbling.

Once out of the oven, scatter fresh basil leaves over the hot pizza.
