Prepare the Cherries
In a medium saucepan, combine the fresh cherries and water. Bring to a simmer over medium heat.

Add Ingredients
Once the cherries are simmering, add the sugar, apple cider vinegar, finely chopped habanero peppers, salt, and cinnamon stick. Stir well to combine.

Simmer the Mixture
Reduce heat to low and let the mixture simmer for about 20 minutes, stirring occasionally, until the cherries are soft and the mixture thickens slightly.

Finish with Vanilla
Remove the saucepan from heat and stir in the vanilla extract. Let the mixture cool to room temperature.

Strain and Store
Once cooled, strain the mixture through a fine mesh sieve to separate the solids from the liquid. Pour the infused liquid into a clean jar or bottle and seal tightly. Store in the refrigerator.
