Prepare the Veal

Pound the veal cutlets to an even thickness. Season with salt and black pepper.

Breading the Veal

Set up a breading station: place flour in one plate, beaten eggs in another, and bread crumbs in a third. Dredge each veal cutlet in flour, dip in eggs, and coat with bread crumbs.

Cook the Veal

In a large skillet, heat butter over medium heat. Add the breaded veal cutlets and cook for 3-4 minutes on each side until golden brown. Remove from skillet and set aside.

Make the Sauce

In the same skillet, add chopped onion and sauté until translucent. Pour in white wine and let it simmer for a few minutes. Add beef broth and capers, and cook for another 5 minutes.

Combine and Serve

Return the veal cutlets to the skillet and coat them with the sauce. Cook for an additional 2-3 minutes to heat through. Garnish with chopped parsley and serve hot.
