Make the Mustard Cream Sauce
In a saucepan, combine the Upslope Craft Lager and heat over medium heat until reduced by half. Stir in the Dijon mustard and heavy cream, then simmer until thickened. Season with salt and pepper to taste.

Prepare the Fried Pickled Onions
Drain the pickled red onions. Set up a breading station with flour, beaten eggs, and breadcrumbs. Dredge the pickled onions in flour, dip in the eggs, and coat with breadcrumbs. Heat vegetable oil in a frying pan over medium-high heat and fry the onions until golden brown. Remove and drain on paper towels.

Sauté the Trinity Greens
In a separate pan, sauté the Trinity greens in a little vegetable oil over medium heat until softened, about 5-7 minutes. Season with salt and pepper.

Assemble the Dish
On a plate, place a serving of sautéed Trinity greens, drizzle with the mustard cream sauce, and top with the fried pickled onions. Serve immediately.
