Sauté Vegetables

In a medium saucepan, heat the olive oil over medium heat. Add the chopped onion and cook until translucent, about 3-4 minutes. Stir in the minced garlic and diced carrot, and cook for another 2 minutes.

Toast the Rice

Add the basmati rice to the saucepan and stir well to coat the rice with the oil and vegetables. Cook for about 2 minutes, stirring frequently, until the rice is lightly toasted.

Add Broth and Seasoning

Pour in the chicken broth, and add salt and black pepper. Bring the mixture to a boil.

Cook the Rice

Once boiling, reduce the heat to low, cover the saucepan, and let it simmer for 15-18 minutes, or until the rice is tender and the liquid is absorbed.

Remove the saucepan from heat. Let it sit covered for 5 minutes, then fluff the rice with a fork. Stir in the chopped parsley and lemon juice before serving.
