Prepare the Bourbon Glaze
In a medium saucepan, combine bourbon, brown sugar, soy sauce, minced garlic, and Dijon mustard. Bring to a boil over medium heat, stirring occasionally. Reduce heat and let simmer for about 10-15 minutes, or until the sauce thickens slightly.
Prepare the Pork Chops
While the glaze is simmering, season the pork chops with salt and black pepper on both sides.
Sear the Pork Chops
In a large skillet, heat olive oil over medium-high heat. Add the pork chops and sear for about 4-5 minutes on each side, or until they are golden brown and cooked through (internal temperature should reach 145°F/63°C).
Glaze the Pork Chops
Once the pork chops are cooked, pour the bourbon glaze over the chops in the skillet. Allow them to simmer in the glaze for an additional 2-3 minutes, coating them well.
Serve
Remove the pork chops from the skillet and serve hot with your choice of two sides, drizzled with extra bourbon glaze if desired.
