Prepare the Vermicelli
Soak the fine vermicelli noodles in warm water for about 10 minutes until softened, then drain and set aside.

Cook the Pork
In a large skillet, heat 1 tablespoon of vegetable oil over medium-high heat. Add the sliced pork belly and cook until crispy and golden brown, about 5-7 minutes. Remove from the skillet and set aside, leaving the rendered fat in the skillet.

Sauté the Shrimp
In the same skillet, add another tablespoon of vegetable oil. Add the minced garlic and sauté for 30 seconds until fragrant. Then, add the shrimp, salt, black pepper, and chili flakes. Cook until shrimp turn pink and opaque, about 3-4 minutes.

Combine Everything
Add the soaked vermicelli noodles to the skillet with the shrimp. Pour in the soy sauce and toss everything together. Add the crispy pork and chopped scallions, mixing well.

Serve immediately while hot, garnished with additional scallions or chili flakes if desired.
