Beverages

Cook the Jasmine rice according to package instructions or cook the vermicelli noodles in boiling water for about 3-4 minutes until al dente. Drain and set aside.

Prepare the Rice or Vermicelli

Marinate the beef, pork, chicken, and shrimp separately with a mix of soy sauce, fish sauce, lime juice, and sugar for at least 30 minutes. Grill each protein on medium-high heat until cooked through, about 5-7 minutes per side for the beef, pork, and chicken. Shrimp should only take about 3-4 minutes until they turn pink.

Grill the Protein

While the proteins are grilling, julienne the cucumber and carrot. Wash and dry the lettuce leaves and chop the fresh herbs.

Prepare the Fresh Vegetables

In a bowl, place a serving of rice or vermicelli as the base. Top with grilled proteins, fresh vegetables, and sprinkle with fresh herbs.

Drizzle the sauce over the top of the bowl and add chili flakes to taste.

In a large pot, combine the beef broth and chicken broth. Bring to a simmer over medium heat.

Prepare the Broth

In a separate pot, cook the rice noodles according to package instructions. Drain and set aside. In the same pot, cook the egg noodles until tender, then drain and set aside.

Cook the Noodles

While the broth simmers, thinly slice the beef and shred the cooked chicken.

Prepare the Proteins

Divide the cooked noodles between serving bowls. Top with sliced beef and shredded chicken.

Assemble the Bowls

Ladle hot broth over the noodles and proteins. Garnish with fresh herbs, bean sprouts, sliced green onions, lime wedges, and chili peppers.

Add soy sauce and fish sauce to each bowl according to taste.

Soak the fine vermicelli noodles in warm water for about 10 minutes until softened, then drain and set aside.

Prepare the Vermicelli

In a large skillet, heat 1 tablespoon of vegetable oil over medium-high heat. Add the sliced pork belly and cook until crispy and golden brown, about 5-7 minutes. Remove from the skillet and set aside, leaving the rendered fat in the skillet.

Cook the Pork

In the same skillet, add another tablespoon of vegetable oil. Add the minced garlic and sauté for 30 seconds until fragrant. Then, add the shrimp, salt, black pepper, and chili flakes. Cook until shrimp turn pink and opaque, about 3-4 minutes.

Sauté the Shrimp

Add the soaked vermicelli noodles to the skillet with the shrimp. Pour in the soy sauce and toss everything together. Add the crispy pork and chopped scallions, mixing well.

Combine Everything

Serve immediately while hot, garnished with additional scallions or chili flakes if desired.

Place the Vietnamese coffee grounds in a phin (Vietnamese coffee filter) and pour hot water over them. Allow it to brew for about 5 minutes.

Prepare the Coffee

Once brewed, pour the coffee over sweetened condensed milk in a glass. Stir well and serve hot or over ice.

Add Condensed Milk

Peel the sugarcane stalks and cut them into smaller pieces. Use a sugarcane juicer to extract the juice.

Extract Juice

Mix the extracted juice with lime juice and serve chilled.

Soak Soybeans

Blend soaked soybeans with 4 cups of water until smooth. Strain through a cheesecloth or fine mesh to extract the milk.
