    Cook Sushi Rice

    In a medium saucepan, combine sushi rice and water. Bring to a boil, reduce heat to low, cover, and simmer for 18-20 minutes until rice is cooked. Remove from heat and let sit covered for 10 minutes.

    Season the Rice

    In a small bowl, mix rice vinegar, sugar, and salt until dissolved. Fold this mixture into the cooked rice gently. Allow the rice to cool to room temperature.

    Prepare Filling

    In a large bowl, combine the seasoned sushi rice, chopped shrimp, diced cucumber, diced avocado, and softened cream cheese. Mix well.

    Assemble Wontons

    Place a wonton wrapper on a clean surface. Add about 1 tablespoon of the filling to the center of the wrapper. Moisten the edges with water, fold the wrapper over to form a triangle, and press to seal. Repeat with remaining wrappers and filling.

    Fry Wontons

    In a deep skillet or pot, heat oil over medium-high heat. Once hot, carefully add the wontons in batches and fry until golden brown and crispy, about 2-3 minutes per side. Remove and drain on paper towels.

    Serve

    Serve warm with soy sauce on the side for dipping.
