Cooking Instructions
- 1
Prepare the Black Bean Patty
In a mixing bowl, mash the black beans until mostly smooth. Add breadcrumbs, onion, garlic, cumin, chili powder, and salt. Mix until combined. Form into 4 patties.
- 2
Cook the Patties
Heat 1 tablespoon of olive oil in a skillet over medium heat. Cook the patties for about 4-5 minutes on each side until golden brown. During the last minute, place a slice of pepper jack cheese on each patty to melt.
- 3
Prepare Avocado Spread
In a small bowl, mash the avocado and mix in lime juice. Season with salt to taste.
- 4
Grill the Sourdough
In the same skillet, add another tablespoon of olive oil if necessary, and grill the sourdough slices until golden brown on both sides.
- 5
Assemble the Melt
Spread avocado on one side of each grilled sourdough slice. Place a black bean patty on top of the avocado, followed by a generous spoonful of pico de gallo and sliced jalapeños. Top with another slice of grilled sourdough.
- 6
Serve
Cut the melts in half and serve warm.
