Prepare the Beef
Preheat the oven to 325°F (165°C). Rub the beef roast with kosher salt, black pepper, and a tablespoon of caraway seeds. Place the roast in a baking dish and cook for about 1.5 to 2 hours, or until it reaches an internal temperature of 135°F (57°C) for medium-rare.

Slice the Roast Beef
Once cooked, remove the roast from the oven and let it rest for 15 minutes. Thinly slice the roast beef against the grain.

Prepare the Rolls
While the beef is resting, slice the kimmelweck rolls in half and toast them lightly in the oven until golden brown.

Assemble the Beef on Weck
Place a generous portion of sliced roast beef on the bottom half of each toasted kimmelweck roll. Top with a spoonful of prepared horseradish and place the top half of the roll over it.

Serve the Beef on Weck with a side of au jus for dipping.
