Cooking Instructions
- 1
Prepare the Chicken
Season the chicken breasts with salt, pepper, and a drizzle of olive oil. Grill or pan-sear the chicken over medium-high heat for about 6-7 minutes on each side, or until fully cooked. Let it rest for a few minutes before slicing.
- 2
Prepare the Salsa
In a mixing bowl, combine the black beans, corn, grape tomatoes, and avocado. Toss gently to mix, and season with salt and pepper to taste.
- 3
Assemble the Salad
On a large plate or bowl, create a bed of mixed greens. Arrange the sliced chicken on top, then spoon the black bean and corn salsa over the chicken.
- 4
Add Final Touches
Drizzle the chipotle purée and balsamic vinaigrette over the whole dish. Sprinkle the toasted corn on top as a garnish.
