Prepare the Ingredients

Rinse and drain the red kidney beans, pinto beans, and black beans. Chop the onion, bell peppers, and mince the garlic.

Sauté Vegetables

In a large pot, heat olive oil over medium heat. Add the chopped onion and bell peppers, and sauté for about 5 minutes until soft. Add the minced garlic and sauté for another minute.

Add Beans and Tomatoes

Stir in the rinsed beans, sweet corn, diced green chilies, and canned tomatoes. Mix well.

Season the Chili

Add cumin, chili powder, paprika, salt, and black pepper to the pot. Stir to combine all the spices with the ingredients.

Simmer the Chili

Bring the mixture to a boil, then reduce the heat and let it simmer uncovered for about 30 minutes, stirring occasionally.

Serve

Once the chili has thickened and flavors have melded, serve hot. Optionally, top with dairy-free crema.
