Preparation Directions
1. Cook Quinoa
Rinse quinoa under cold water. In a medium saucepan, combine quinoa with 2 cups of water and a pinch of salt. Bring to a boil, then reduce heat to low, cover, and simmer for 15 minutes or until water is absorbed. Fluff with a fork and set aside.
2. Prepare Kale
Remove the stems from the kale and chop the leaves into bite-sized pieces. In a mixing bowl, massage kale with a little olive oil, salt, and pepper until tender. Set aside.
3. Prepare Veggies
Chop cucumbers and halve grape tomatoes. Set aside.
4. Cook Chicken or Cauliflower
If using grilled or crispy chicken, cook according to package instructions or grill until fully cooked. For buffalo cauliflower, bake or fry until crispy and toss with buffalo sauce.
5. Assemble the Bowl
In a large bowl, layer the cooked quinoa, marinated kale, cucumbers, grape tomatoes, and choice of chicken or cauliflower. Drizzle with ranch dressing and additional buffalo sauce if desired.
6. Serve
Toss gently to combine and serve immediately, garnished with extra ranch dressing or buffalo sauce on the side if desired.
