Preparation Steps

  1. 1

    Prepare the Vegetables

Peel and dice the sweet and white potatoes into small cubes. Chop the onion, poblano pepper, and bell pepper into bite-sized pieces.

  2. 2

    Cook the Potatoes

In a large skillet, heat the olive oil over medium heat. Add the diced sweet and white potatoes and cook for about 10 minutes until they start to soften. Stir occasionally.

  3. 3

    Add the Vegetables

Add the chopped onion, poblano pepper, and bell pepper to the skillet. Season with salt and black pepper. Sauté for an additional 5-7 minutes until the vegetables are tender.

  4. 4

    Incorporate the Turkey and Corn

Stir in the smoked turkey and corn kernels. Cook for another 5 minutes, allowing the turkey to heat through.

  5. 5

    Cook the Eggs

In a separate pan, cook the eggs to your liking (fried, scrambled, or poached).

  6. 6

    Serve

Divide the turkey hash among plates, top each with a cooked egg, and serve with toasted bread on the side.
