1. Prepare Quinoa
Rinse quinoa under cold water. In a saucepan, combine quinoa and vegetable broth. Bring to a boil, then reduce heat and simmer for 15 minutes, or until liquid is absorbed.
2. Sauté Vegetables
In a skillet, heat olive oil over medium heat. Add minced garlic and diced bell pepper. Sauté for about 5 minutes until softened.
3. Add Spinach and Chickpeas
Stir in spinach and drained chickpeas, cooking until spinach wilts, about 2-3 minutes.
4. Combine and Season
Add cooked quinoa to the skillet. Drizzle with lemon juice, and season with salt and pepper. Stir everything together and cook for an additional 2 minutes.
5. Serve
Serve warm, garnished with additional lemon juice if desired.
