1. Prepare the Apples
Wash and core the fresh apples. Cut them into quarters and place them in a large pot.
2. Combine Ingredients
Add the water, sugar, cinnamon sticks, cloves, nutmeg, lemon juice, and vanilla extract to the pot with the apples.
3. Cook the Mixture
Bring the mixture to a boil over medium-high heat, then reduce to a simmer. Cover the pot and cook for about 30-40 minutes, stirring occasionally, until the apples are soft.
4. Mash and Strain
Use a potato masher to mash the apples into a pulp. After mashing, strain the mixture through a fine mesh sieve or cheesecloth into another pot, discarding the solid apple pulp.
5. Cool and Serve
Let the cider cool to room temperature before serving. You can also chill it in the refrigerator for a refreshing drink. Serve warm or cold, garnished with a cinnamon stick if desired.
