Prepare the Cornbread
Follow the instructions on the cornbread mix box to prepare the batter. Pour into a greased skillet and cook on medium heat until golden brown on both sides. Set aside.

Sauté the Onions
In a large skillet, heat olive oil over medium heat. Add chopped onions and sauté until they are caramelized, about 5-7 minutes.

Cook the Sweet Potatoes
Add diced sweet potato to the skillet with the onions. Cook for about 10 minutes, stirring occasionally, until the sweet potatoes are tender.

Add Tofu and Seasonings
Crumble the firm tofu into the skillet and add minced garlic, ground cumin, salt, and black pepper. Stir well to combine.

Incorporate Black Beans and Peppers
Add black beans and roasted red peppers to the skillet. Cook for an additional 5-7 minutes until everything is heated through.

Serve the scrambled tofu hash warm alongside slices of grilled cornbread.
