    Preheat the Oven

    Preheat your oven to 375°F (190°C).

    Prepare the Tortillas

    Cut the corn tortillas into quarters and lightly fry them in a skillet until they are slightly crispy. Drain on paper towels.

    Sauté Vegetables

    In the same skillet, sauté the diced onion, zucchini, and jalapeño until they are softened, about 5 minutes. Add the corn and black beans, stirring to combine, and cook for another 2 minutes.

    Mix Eggs and Salsa

    In a large bowl, whisk together the eggs and salsa verde until well combined.

    Layer the Casserole

    In a greased 9x13 inch casserole dish, layer half of the fried tortillas, followed by the sautéed vegetable mixture, half of the Monterey Jack cheese, and half of the egg mixture. Repeat the layers with the remaining tortillas, vegetables, cheese, and egg mixture.

    Bake

    Cover the casserole with foil and bake in the preheated oven for 30 minutes. Remove the foil and bake for an additional 15 minutes, or until the eggs are set and the cheese is bubbly.

    Let the casserole cool for a few minutes, then serve warm topped with sour cream.
