Make the Biscuits
Preheat the oven to 425°F (220°C). In a large bowl, combine flour, baking powder, baking soda, and salt. Cut in the butter until the mixture resembles coarse crumbs. Stir in buttermilk until just combined. Turn the dough onto a floured surface and knead gently. Roll out to about 1 inch thick and cut into rounds. Place on a baking sheet and bake for 12-15 minutes until golden brown.

Prepare the Gravy
In a skillet over medium heat, cook the chorizo sausage until browned and cooked through. Sprinkle in 1 tablespoon of flour and stir to coat the sausage. Gradually add the milk while stirring, bringing it to a simmer. Cook until thickened, about 5-7 minutes. Season with black pepper to taste.

Serve
Split the warm biscuits in half, top with the chorizo gravy, and place the cooked eggs on top. Serve with a side of home fries.
