    Prepare the Dough

    In a large mixing bowl, combine warm water, sugar, and active dry yeast. Allow it to sit for about 5-10 minutes until it's frothy. Gradually add all-purpose flour and salt, mixing until a dough forms.

    Knead the Dough

    Transfer the dough onto a floured surface and knead for about 10 minutes until smooth and elastic.

    First Rise

    Place the kneaded dough into a greased bowl, cover with a damp cloth, and let it rise in a warm area for about 1 hour or until doubled in size.

    Shape the Bagels

    Once risen, punch down the dough and divide it into 8 equal pieces. Roll each piece into a ball, then poke a hole in the center and stretch it to form a bagel shape.

    Second Rise

    Place the shaped bagels on a parchment-lined baking sheet and let them rest for 20 minutes.

    Boil the Bagels

    Preheat your oven to 425°F (220°C). Bring a large pot of water to a boil. Boil each bagel for about 1-2 minutes on each side. Remove and let drain on a wire rack.

    Bake

    Place boiled bagels back on the baking sheet, add toppings if desired, and bake for 20-25 minutes until golden brown.

    Allow the bagels to cool slightly. Serve with cream cheese or vegan butter as desired.
