Pickled Red Onion Preparation

Prepare the Pickled Red Onion
Slice the large red onion into thin rings. In a medium saucepan, combine the apple cider vinegar, water, sugar, and salt. Bring to a boil over medium heat, stirring until the sugar and salt dissolve. Once boiling, remove from heat and add the sliced onions. Let them sit for at least 30 minutes to pickle.

Warm the Olives
In a small saucepan, combine the mixed olives with olive oil, fresh thyme, and red pepper flakes. Warm them over low heat for about 5-7 minutes, stirring occasionally. Don’t let them boil; you just want them to be heated through.

Assemble the Dish
Once the olives are warmed, remove them from the heat. Crumble the goat cheese over the warm olives. Serve the olives with the pickled red onions on the side, allowing guests to add them to their taste.
