Dough

Sauce (optional)

Method

Dough Preparation

  1. 1

    Make the Dough

In a large mixing bowl, combine the all-purpose flour and salt. Make a well in the center and crack in the eggs. Using a fork, beat the eggs gently, gradually incorporating the flour from the edges of the well until the mixture is too stiff to mix with a fork.

  2. 2

    Knead the Dough

Transfer the dough to a floured surface and knead for about 8-10 minutes until smooth and elastic. Wrap the dough in plastic wrap and let it rest for at least 30 minutes at room temperature.

Filling Preparation

  1. 3

    Prepare the Filling

In a medium bowl, combine the ricotta cheese, Parmesan cheese, cooked spinach, nutmeg, salt, and black pepper. Mix well until all ingredients are thoroughly combined.

Assembly

  1. 4

    Roll Out the Dough

After resting, divide the dough into four pieces. Roll out each piece on a floured surface or using a pasta machine to a thin sheet, about 1/16 inch thick.

  2. 5

    Form the Ravioli

Place small spoonfuls of the filling (about 1 teaspoon) on one half of the pasta sheet, leaving about 1 inch of space between each. Fold the other half of the sheet over the filling and press down around each mound to seal, ensuring there are no air pockets.

  3. 6

    Cut the Ravioli

Use a sharp knife or a pasta cutter to cut the ravioli into individual pieces. Press the edges with a fork to ensure they are sealed properly.

Cooking

  1. 7

    Cook the Ravioli

Bring a large pot of salted water to a boil. Carefully drop the ravioli into the boiling water and cook for about 4-5 minutes, or until they float to the surface and are tender.

Sauce Preparation (optional)

  1. 8

    Make the Sauce

While the ravioli are cooking, heat olive oil in a large skillet over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant. Add cherry tomatoes and cook until they soften, about 5-7 minutes. Stir in fresh basil and season with salt and pepper to taste.

Serving

  1. 9

    Serve the Ravioli

Drain the ravioli and serve immediately, topped with the prepared sauce, if desired. Garnish with additional Parmesan cheese and fresh basil.
