Method

Preparation

  1. 1

    Cook the Linguine

In a large pot of boiling salted water, cook the linguine according to package instructions until al dente. Drain and set aside, reserving 1/2 cup of the pasta cooking water.

Cooking

  1. 2

    Sauté the Garlic

In a large skillet over medium heat, add the olive oil and 2 tablespoons of butter. Once melted, add the minced garlic and red pepper flakes. Sauté for about 1-2 minutes until the garlic is fragrant, being careful not to burn it.

  2. 3

    Cook the Shrimp

Add the jumbo shrimp to the skillet. Season with salt and black pepper. Cook for about 2-3 minutes on each side, or until the shrimp are pink and opaque.

  3. 4

    Add the Wine

Pour in the white wine and lemon juice. Bring the mixture to a simmer and let it reduce for about 2-3 minutes.

  4. 5

    Combine Pasta and Sauce

Add the cooked linguine to the skillet with the shrimp and sauce. Toss everything together, adding reserved pasta water a little at a time if needed to loosen the sauce. Stir in the remaining butter and chopped parsley.

Serving

  1. 6

    Plate and Serve

Serve the shrimp scampi immediately, garnished with extra parsley and lemon wedges if desired.
