Prepare the Pork
Pound the pork loin chops to an even thickness of about 1/2 inch using a meat mallet. Season both sides of the pork with salt and black pepper.

Assemble the Saltimbocca
Place 2 slices of prosciutto on each pork chop, followed by 3 sage leaves. Secure the prosciutto and sage to the pork using toothpicks or kitchen twine.

Heat the Pan
In a large skillet, heat the olive oil and 1 tablespoon of butter over medium heat until hot.

Cook the Pork
Add the pork chops to the skillet, prosciutto side down. Cook for about 4-5 minutes until the prosciutto is crispy. Flip and cook for an additional 4-5 minutes on the other side until the pork is cooked through and reaches an internal temperature of 145°F (63°C).

Deglaze the Pan
Remove the pork chops from the skillet and set aside on a plate. Add the dry white wine to the skillet, scraping up any browned bits from the bottom. Let it simmer for 2-3 minutes until reduced slightly.

Stir in the remaining tablespoon of butter into the wine sauce until melted and combined. Pour the sauce over the pork chops before serving.
