Crust Preparation

    Preheat the Oven

    Preheat your oven to 350°F (175°C).

    Mix the Crust Ingredients

    In a medium bowl, combine graham cracker crumbs, sugar, and melted butter. Stir until the mixture resembles wet sand.

    Form the Crust

    Press the mixture firmly into the bottom of a 9-inch springform pan. Use the bottom of a measuring cup to pack it down evenly.

    Bake the Crust

    Bake the crust in the preheated oven for 10 minutes. Once done, remove from oven and let cool while preparing the filling.

Cheesecake Filling Preparation

    Mix Cream Cheese

    In a large mixing bowl, beat the softened cream cheese with an electric mixer until smooth and creamy.

    Add Sugar and Sour Cream

    Gradually add granulated sugar and sour cream to the cream cheese, mixing until well combined.

    Incorporate Vanilla

    Add vanilla extract and mix until incorporated.

    Add Eggs One at a Time

    Add the eggs one at a time, mixing on low speed after each addition until just blended.

    Stir in Passionfruit Puree

    Gently fold in the passionfruit puree until evenly distributed throughout the mixture.

    Pour Filling into Crust

    Pour the cheesecake filling over the cooled crust in the springform pan.

    Bake the Cheesecake

    Bake in the oven for 50-60 minutes, or until the center is set and only slightly jiggly. Turn off the oven and let the cheesecake cool in the oven with the door slightly ajar for 1 hour.

    Remove from the oven and refrigerate for at least 4 hours, preferably overnight.

Whipped Cream Preparation

    Place the mixing bowl and beaters in the refrigerator for 10-15 minutes to chill.

    In the chilled bowl, combine heavy cream, powdered sugar, and vanilla extract.

    Using an electric mixer, beat the mixture on medium-high speed until soft peaks form.

    Once the cheesecake is chilled and set, top each slice with a dollop of whipped cream before serving.
