Preparing Mussels

    Clean the Mussels

    Rinse the PEI mussels under cold running water. Scrub the shells with a brush to remove any debris and remove any beards (the fibrous material sticking out from the shells). Discard any mussels that are open and do not close when tapped.

    Sauté Aromatics

    In a large pot, melt 2 tablespoons of butter over medium heat. Add the finely chopped shallots and minced garlic. Sauté for about 3-4 minutes until they are soft and translucent but not browned.

    Add Wine and Mussels

    Pour in the dry white wine and add the cleaned mussels to the pot. Increase the heat to medium-high and cover the pot. Cook for about 5-7 minutes until the mussels open. Discard any mussels that remain closed.

    Add Final Seasoning

    Once the mussels are cooked, lower the heat to medium and stir in the remaining 2 tablespoons of butter, chopped parsley, salt, and black pepper to taste. Mix well and remove from heat.

Fried Bread Preparation

    Slice the Baguette

    Slice the French baguette into 1-inch thick slices.

    Fry the Bread

    In a skillet, heat the olive oil over medium heat. Add the sliced baguette pieces and fry until golden brown and crispy, about 2-3 minutes per side. Season with salt to taste.

Serving

    Serve the Dish

    Serve the mussels in a large bowl or platter, drizzling the butter sauce over them. Accompany with the crispy fried bread on the side for dipping into the sauce.
