Making the Gelato Base

    Combine Dairy Ingredients

    In a medium saucepan, combine the whole milk and heavy cream. Heat over medium heat until the mixture is warm but not boiling.

    Whisk Sugar and Egg Yolks

    In a separate bowl, whisk together the granulated sugar and egg yolks until the mixture is pale and creamy.

    Temper the Egg Mixture

    Gradually pour about a cup of the warm milk mixture into the egg yolk mixture, whisking constantly to prevent the eggs from cooking.

    Combine and Thicken

    Pour the tempered egg mixture back into the saucepan with the remaining milk mixture. Cook over medium-low heat, stirring constantly until the mixture thickens enough to coat the back of a spoon (about 5-7 minutes).

    Remove from heat and stir in the vanilla extract. Let the mixture cool to room temperature, then refrigerate for at least 4 hours, or overnight.

Churning the Gelato
