House Made Italian Sausage

    Prepare the sausage mix

    In a mixing bowl, combine ground pork, fennel seeds, red pepper flakes, garlic powder, salt, black pepper, and chopped parsley. Mix well until all ingredients are incorporated.

    Form sausage patties

    Shape the mixture into small patties or logs, about 2-3 inches long. Set aside.

Pickled Pepper Drops

    Prepare the pickled pepper drops

    In a bowl, mix pickled peppers with olive oil and chopped fresh basil. Set aside for flavors to meld.

Spicy Marinara Sauce

    Sauté garlic

    In a saucepan, heat olive oil over medium heat. Add minced garlic and sauté until fragrant, about 1 minute.

    Cook the sauce

    Add crushed tomatoes, red pepper flakes, salt, and sugar to the saucepan. Stir to combine and let simmer for 20 minutes. Add chopped basil before serving.

Lemon Ricotta

    Mix ricotta

    In a bowl, combine ricotta cheese, lemon zest, lemon juice, and salt. Mix until smooth and well blended.

Rigatoni

    Cook the rigatoni

    Bring a large pot of salted water to a boil. Add rigatoni pasta and cook according to package instructions until al dente. Drain and set aside.

Assembly

    In a large serving bowl, combine the cooked rigatoni, spicy marinara sauce, and house made Italian sausage. Toss gently to coat the pasta with the sauce.
